Fabrizio Righetti

Executive Chef

Hilton Tallinn Park Executive Chef Fabrizio Righetti believes in connecting cultures, flavors and people together through food. As Executive Chef at Hilton Tallinn Park, Fabrizio is responsible
for menu development, concept and programming for the hotel’s signature restaurant The Able Butcher, as well as in-room dining and banquet operations.

Fabrizio has been exposed to different culture and food in his 20+ years of culinary experience, originary of Rome in Italy, his career path as make him travel around the world with working experience in
UK, The Netherlands, Libya, Monaco, Ukraine, Russia, Lithuania, Latvia and since October 2021 Estonia.

Erki Tammemäe

General Manager

Erki Tammemäe, the Restaurant General Manager at The Able Butcher, exemplifies how determination and hard work can propel one’s career. Despite only being in his thirties, Erki has already worked in both Estonia and Australia within the hospitality industry.

Erki’s journey began during his school days when he worked at an Old Town restaurant. Although he eventually felt that the restaurant work had its limits, he knew he wanted to connect his future with the hospitality sector. In Australia Erki immersed himself in learning about the hotel industry.

When the Hilton chain opened a hotel in Estonia, he applied and secured a position as a Front Desk Administrator eventually working as a Front Office Manager for several years only to return back to the roots – the culinary world.

Erki’s dedication and hard work ultimately led to a promotion to the position of Restaurant General Manager. Through his passion for hospitality and being inspired by creating long lasting memories Erki successfully transitioned into his new role and continued to excel in managing the overall operations of the restaurant. “Hospitality is a lifestyle,” as Erki has always said.


Chef DE Cuisine

Mesut joined Hilton Tallinn Park as Chef de Cuisine. With his experience and passion for culinary artistry he is taking the journey of the Able Butcher to the next level.

Our Chef de Cuisine brings to the Team 13 years of luxury hospitality experience with placements all over the world including Istanbul, Dubai and Singapore. His exceptional skillset is the fruit of working for world-renowned restaurants and performing with Michelin starred chefs.

Mesut feels inspired by the chance to design a grill house concept evolving around sustainability. He aspires to treat his guests to both – new and classic flavors – inviting you to feel love through your stomach at The Able Butcher restaurant.

His motto is “Always add a special touch in what you do, differentiate it from others and develop your very own signature to make it special”.
